Ingredients

  • 1 lb lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 large flour tortillas
  • Optional Ingredients
  • Jalapeño slices
  • Fresh cilantro
  • Diced tomatoes
  • Green onions
  • Hot sauce
  • Pickled jalapeños

  • Salsa
  • Sour cream

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add diced onions and bell peppers, cooking until softened.
    Add ground beef and cook until browned. Drain excess grease if needed. Stir in chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
    Place one tortilla into a clean skillet. Sprinkle half with cheese, add the beef mixture, then top with more cheese. Fold the tortilla over.
    Cook for 2–3 minutes per side until golden brown and crispy with fully melted cheese. Slice and serve with salsa, sour cream, guacamole, and lime wedges.
