- ½ cup unsalted butter melted
- 1 large egg
- 1 cup canned peaches thoroughly drained and finely diced
- ½ teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- For the optional glaze:
- 1 cup powdered sugar
- 1 –2 tablespoons milk
- ½ teaspoon vanilla extract
Preheat the oven to 350°F and line a baking sheet with parchment paper.Drain the canned peaches very well and gently blot them with paper towels. Dice them into small pieces.Combine yellow cake mix, melted butter, egg, vanilla, and cinnamon in a mixing bowl. Stir until a thick dough forms.Gently fold in the diced peaches without overmixing.Scoop the dough onto the prepared baking sheet, leaving about 2 inches between cookies.Bake for 10–13 minutes, until the edges are set and the centers still look slightly soft.Cool on the baking sheet for about 5 minutes, then transfer to a wire rack.For the glaze, whisk powdered sugar, milk, and vanilla until smooth.
