Ingredients
  

  • For the Mediterranean Quesadillas
  • 4 large flour tortillas
  • 2 cups fresh baby spinach
  • 1 cup shredded mozzarella cheese
  • ¾ cup crumbled feta cheese
  • ½ medium red onion thinly sliced
  • ¼ cup chopped sun dried tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Pinch of crushed red pepper flakes optional
  • For Cooking
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Optional Additions
  • 1 cup cooked Greek chicken
  • Scrambled eggs
  • Sliced olives
  • Roasted red peppers

  • Tzatziki sauce
  • Greek yogurt

Instructions
 

  • Step 1: Prepare the Filling
    Heat olive oil in a skillet over medium heat. Add sliced red onion and cook until slightly softened.
    Add spinach and cook until wilted. Remove from heat and mix with sun dried tomatoes, oregano, garlic powder, and black pepper.
    Allow the filling to cool slightly before assembling the quesadillas.
    Step 2: Assemble the Quesadillas
    Place tortillas on a flat surface.
    Add mozzarella cheese, spinach mixture, feta cheese, and another small layer of mozzarella on one half of each tortilla.
    Fold the tortilla over and gently press to secure the filling.
    Step 3: Cook Until Crispy
    Heat butter and olive oil in a skillet.
    Cook each quesadilla for 3–4 minutes per side over medium heat until the tortilla becomes golden and crispy and the cheese melts completely.
    Avoid high heat because the outside can brown before the filling warms properly.
    Step 4: Slice and Serve
    Remove from the skillet and let the quesadillas rest for one minute.
    Slice into wedges and serve warm with tzatziki sauce, Greek yogurt, fresh herbs, or a side salad.
