Instructions
 

  • Heat olive oil in a large pot over medium heat and cook the ground chicken or turkey until browned. Add chopped onion and garlic and cook until soft and fragrant. Stir in taco seasoning, cumin, and paprika and mix well. Add diced tomatoes, black beans, corn, and chicken broth, then stir and bring to a simmer. Let it cook for 10 to 15 minutes so the flavors blend properly. Reduce the heat to low and slowly mix in Greek yogurt and milk until the soup becomes creamy. Do not boil after adding yogurt. Taste and adjust seasoning as needed, then serve hot.
