- 1 lb lean ground beef 90/10 recommended
- 1 bag 14–16 oz fresh broccoli slaw mix
- 3 cloves garlic minced
- 1 tbsp fresh ginger grated
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp rice vinegar
- 1 tsp honey
- ½ tsp black pepper
- ¼ tsp red pepper flakes optional
- 2 green onions sliced (for garnish)
- 1 tsp sesame seeds for garnish
Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it into small crumbles until fully browned. Drain any excess grease if needed.Add Aromatics & Veggies: Stir in the minced garlic and grated ginger; cook for 1 minute until fragrant. Add the bag of broccoli slaw and cook for 4–5 minutes until the vegetables soften slightly while maintaining a slight crunch.Sauce & Combine: In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, black pepper, and red pepper flakes. Pour over the beef and veggies, cooking for another 2–3 minutes while stirring frequently to coat everything.Garnish & Serve: Remove from heat. Top with sliced green onions and sesame seeds. Serve hot over steamed jasmine rice, brown rice, or cauliflower rice.
