- 2 chicken breasts or thighs
- 1 cup orzo pasta
- 1 large onion sliced
- 2 cups chicken broth
- 2 cloves garlic minced
- 1 cup shredded cheese mozzarella or gruyere
- 2 tbsp butter or oil
- Salt and pepper to taste
- Fresh herbs optional
Heat oil in a pan and cook seasoned chicken until golden and fully cooked. Remove and set aside.In the same pan, cook onions until soft and slightly caramelized. Add garlic and sauté briefly.Pour in chicken broth and add orzo. Cook until slightly tender.Cut chicken into pieces and mix back into the pan.Transfer mixture to a baking dish and top with cheese.Bake at 180°C (350°F) for 15–20 minutes until cheese is melted and golden.Let it rest for a few minutes before serving.
