Ingredients

  • 2 large English cucumbers thinly sliced
  • 2 cups fresh strawberries sliced
  • 4 cups chopped romaine lettuce
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves
  • ¼ small red onion thinly sliced
  • ¼ cup chopped toasted walnuts optional
  • For the Honey Balsamic Dressing
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Freshly ground black pepper

Instructions
 

  • Wash the cucumbers, strawberries, lettuce, and mint thoroughly. Pat everything completely dry before slicing to keep the salad crisp.
    Whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until smooth and well combined.
    In a large bowl, combine the lettuce, cucumbers, strawberries, red onion, feta cheese, mint, and walnuts. Pour the dressing over the salad and toss gently until everything is lightly coated.
    Transfer to a serving platter, garnish with extra feta and fresh mint, and serve immediately for the best texture and flavor.
