  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper

  • ½ cup diced bell peppers

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
    Heat olive oil in a large skillet. Cook the onion until soft, then add garlic and cook for 30 seconds.
    Add ground beef and cook until browned. Drain excess fat.
    Stir in smoked paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper.
    Mix in the cream of mushroom soup and sour cream until smooth.
    Arrange half of the sliced potatoes in the baking dish.
    Spread half of the beef mixture over the potatoes.
    Sprinkle half of both cheeses over the beef layer.
    Repeat the layers using the remaining potatoes, beef mixture, and cheese.
    Cover tightly with foil and bake for 50–60 minutes.
    Remove the foil and bake another 15–20 minutes until the cheese is golden and bubbly.
    Rest the casserole for 10 minutes before slicing.
    Garnish with parsley or green onions and serve warm.
