- 8 slices brioche or challah bread
- 200 g cream cheese softened
- 6 –8 strips bacon cooked and chopped
- 4 large eggs
- 1/2 cup milk or heavy cream
- 3 tbsp maple syrup
- 2 tbsp bourbon
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 tbsp butter
In a bowl, mix cream cheese, 1 tablespoon maple syrup, and chopped bacon until smooth.Spread the mixture between two slices of bread to make sandwiches.In another bowl, whisk eggs, milk, remaining maple syrup, bourbon, vanilla, and cinnamon.Heat butter in a skillet over medium heat.Dip each sandwich into the egg mixture, coating both sides.Place on the skillet and cook until golden brown on both sides.Remove from pan and serve warm with extra maple syrup.
