Ingredients
  

  • 4 boneless pork chops
  • 1 cup apple cider not vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 small onion sliced
  • 1 teaspoon fresh thyme or ½ teaspoon dried
  • Salt and black pepper to taste

Instructions
 

  • Step 1: Cook Sweet Potatoes

    Boil the chopped sweet potatoes in salted water for 15–20 minutes until soft. Drain and mash with butter, milk, and salt. Set aside and keep warm.

    Step 2: Sear the Pork

    Season pork chops with salt and pepper. Heat olive oil in a skillet over medium heat and cook pork for 4–5 minutes per side until golden. Remove and set aside.

    Step 3: Prepare the Sauce

    In the same pan, cook sliced onion until soft. Add garlic and cook for 1 minute. Pour in apple cider and add thyme. Stir well.

    Step 4: Simmer

    Return pork chops to the pan. Let them simmer in the sauce for 8–10 minutes until fully cooked and tender.

    Step 5: Serve

    Plate mashed sweet potatoes, place pork on top, and pour the apple cider sauce over it. Serve warm.
